
PAT’S SPRING INTO SUMMER FRUIT SOUP
½ cup sugar
3 tablespoon quick tapioca
2 ½ water divided
1 can (6 oz) frozen orange juice concentrate
1 package 10 oz frozen sliced sweetened strawberries –thawed
2 cups fresh or frozen sliced peaches
1 (11 oz) can mandarins
2 medium ripe bananas sliced
1 pint lime sherbet…optional
In sauce pan mix, sugar, tapioca, 1 ½ cup water,
Cook on medium heat for 5 to 6 minutes or until
thickened and clear. Remove from heat. Add orange
juice concentrate and remaining water and stir to melt
orange juice. Stir in strawberries, peaches and oranges.
Cover and refrigerate 2 hours, stir in bananas just before
serving. Top with a scoop of sherbet just before serving
