Nancy's Luncheon April 20th, 2021

 


This is Nancy our cook for the month of April
And what a cook she is, she spoiled us
cooking the very best for us
Next month Alcy will be the cook for May







Oranges and walnuts from her yard also
beautiful flowers.
The walnuts she candied and the recipe for
 is way back on one of the blogs.
Everyone could come and we all enjoyed
 ourselves very much, we stayed until almost dinner time.

Garlic Rolls are a secret family recipe!!!



Great Grandmothers Chicken Piccata

 

Go out to the chicken house and wring 3 chickens

necks, maybe 4 chickens.  If you don’t have chickens

maybe the farm next to you might have some extra.

 

6 boneless skinless chicken breast halves

or thighs

2 tablespoons butter

¼ cup olive oil

Flour for coating chicken

salt and pepper to taste

4 garlic cloves, finely chopped

1 pound mushrooms cleaned and chopped

 or artichoke hearts or whatever you have in your

garden.

1 & ½ white wine

½ cup capers, rinsed

1 cup fresh parsley chopped

2 teaspoons dried oregano

 

How Grannie made it:

 

Cut each chicken breast into quarters and smash 

them using a wooden mallet, gently pound them,

but if you are stressed just pound them hard as you can,

do it on each side of the chicken part, breast or thighs

 

Melt butter with olive oil in a large skillet.  Heat over 

medium to medium high heat . Cast iron skillet is the best.

Coat each piece of chicken with flour, salt and pepper and 

place in the pan.  Lightly brown each side of the chicken.

Add garlic and mushrooms and stir all ingredients to combine.

Add wine (be careful not to drink too much of this as it needs to

go into the sauce and you to not be sauced. Back to the wine…

cook 1 minute.  Reduce heat to simmer.  After 5 minutes, add capers, 

lemon juice, almost all the parsley (reserve some for garnish) and

oregano.  Cover pan and simmer for 25 minutes, using low 

heat.  Garnish with reserved parsley and serve over linguine,

or rice or whatever you have in your cupboard.
