Pat's Christmas Luncheon December 10th, 2021

                             This is Pat, our gracious hostess for the Christmas Luncheon
 


Pat was so gracious to cook a giant meal and
 this is the second time this year she has done this for us.
We appreciate you Pat for all you do.
Thanks for the Lemon Curd, and Jam and Jellies.
Alcy thanks for the Candy you made for us.
And Joycie made a Christmas Potpourri for all,
this potpourri last several days, just heat it up again.
Pat had her home all decorated so nice.
We are so sorry that Nancy couldn't come to 
our Christmas Luncheon.

Pat’s Great Grandmothers Broccoli/cheese Casserole


6 cups chopped fresh broccoli florets

1 (10 3/4 oz can condense cream of mushroom soup

1 cup mayonnaise

1/2 stick butter…melted

2 large eggs, lightly beaten

1/2 medium onion, finely diced

1/2 tsp salt

1/4 tsp freshly ground pepper

1&1/2 cups grated extra sharp cheddar cheese

1 full sleeve Ritz Crackers finely crushed.


How to make it

Steam broccoli in a steamer (a little bit less than 5 minutes,

So you don’t end up with mush) over simmering water.  Cover and steam.

Preheat oven 350 Degrees.  In a large bowl combine it all except for

With cheese and crushed crackers on top.  Bake 30 to 40 minutes

Let it stand about 15 minutes before serving.  This is really good.

Pat’s Mothers Recipe


Ribbon Salad


2-3oz PKG Lime Jell-O

1-3oz PKG Lemon Jell-O

½ cup marshmallow creme

1 cup Pineapple juice

1-8oz PKG cream Cheese

1-1lb.4 oz can crushed pineapple

1 cup cream-whipped

1 cup mayonnaise

2-3oz PKG-cherry Jell-O


Prepare lime Jell-O, set in 9x13 pan

Dissolve lemon Jell-O in 1 cup hot water

add marshmallow cream &melt…add pineapple juice, cream cheese.

Add the drained pineapple whipped cream & mayonnaise Pour over lime Jell-O

Chill until set.  Prepare cherry Jell-O and top next layer 

chill until set.






Cherry Cream Cheese Pie


Cherry cream cheese pie. Graham cracker crust. Beat 1 block softened cream cheese with 1 cup cream whipped to soft whip with some powdered sugar and vanilla. Put in crust and top with a can of cherry pie filling.






Alcy’s Bread Recipe


Bread is 3 c flour, 1/4 teas yeast, 1 teas. Salt, 1 1/2 cup warm water plus another 1/8 c.  Stir all together in the evening and cover bowl with Saran Wrap. Let sit for 12 hrs. Then stir it down and let sit another couple hours. Heat a cast iron Dutch oven in the oven at 450*. When very hot pour bread dough into Dutch oven and bake with cover 30 min. Uncover and bake another 20 mi


Pat said it only took 5 minutes to put it all in a bowl, and then the rest is history.

Pat’s Porkers


Pork chops in a 9x13 pan. Mix cream of mushroom soup, sour cream and white wine and pour over chops bake in oven at 350* for a couple hrs. Til tender.

it is very good.  


Pats Mothers Recipe for Candy Carmel


1 3/4 c dark Karo Syrup

2 c sugar

1 c cream

1 c butter

2 Tbs vanilla

1 cup chopped walnuts


Put everything into the pot at once.  Vanilla  and nuts at the end.

Bring to boil first 4 things and then add a second cup of cream

Boil at 250 on candy thermometer  (firm ball stage)

Add vanilla and nuts last.

Pour into well buttered 9x13 pan.  Allow to cool.  Dump out of pan and cut

Into squares and wrap in waxed paper.

They take hours to cook so allow plenty of time when making them.  


This is an old time recipe and it is really good.  Old equals good.

Sandys Luncheon November 8th, 2021

 



This is Sandy, our cook for November
and she made us a wonderful lunch.
The Mac and Cheese was so good along
with the ham.
We all had a great time and lots of fun!

Where is PAT?






Sandys Sweetie Pie Carrots

2 pounds carrots sliced
1/4 tsp salt and 1/4 tsp pepper
1/2 cup brown sugar
3 Tbs butter
2 Tbs Digon Mustard
2Tbs minced parsley

Sandy said no brainer, cook carrots until tender and drain
Put back in pan and add all the rest and stir until all is coated.
Then eat.   Simple as that she said.

Secret recipe she said.  It was so good
and hit the spot.
