Sandy’s Waikiki Beach Chicken

10 boneless skinless chicken breast halves

½ cup flour

1/3 cup salad oil or shortening

1 teaspoon salt

¼ teaspoon pepper

Sauce

1 can (1 pound 4 ounces) sliced pineapple

1 cup sugar

2 tablespoon cornstarch

¾ cup cider vinegar

1 tablespoon soy sauce

¼ teaspoon ginger

1 chicken bouillon cube

1 large green pepper, cut crosswise

in 1/4 inch circles.

1. Wash chicken, pat dry with paper towels.

coat chicken with flour.

2. Heat oil in large skillet. Add Chicken a

few pieces at a time and brown on all sides.

Remove as browned to shallow roasting pan,

arrange pieces skin side up. Sprinkle with

salt and pepper.

3. Meanwhile, preheat over to 350 degrees.

4. Make Sauce: Drain pineapple, pouring syrup

Into 2- cup measure. Add water to make 1 ¼ cups.

5. In medium saucepan, combine sugar, cornstarch,

pineapple syrup, vinegar, soy sauce, ginger, and

bouillon cube; bring to boiling, stirring constantly.

Boil two minutes. Pour over chicken.

6. Put pineapple and green pepper on top of each chicken

breast and bake uncovered 30 minutes. Serve with fluffy

white rice.

Makes 10 servings

Note: This chicken was great, very moist and very good.

Sandy’s Pineapple Nut Bread Waikiki

This is so good! It makes you feel like you are at Sandy’s

Famous Resort on Waikiki Beach, just try it!

Ingredients:

¾ cup light brown sugar

6 tablespoons butter

2 eggs

1 can (8-9 ounces) crushed pineapple, un-drained

1 teaspoon vanilla extract

1 cup chopped walnuts or pecans

2 ¼ cups all-purpose flour, stir before measuring

2 teaspoons baking powder

¼ teaspoon baking soda

¼ teaspoon salt

Topping:

1 tablespoon granulated sugar

¼ teaspoon cinnamon

¼ cups chopped pecans or walnuts

Preparation:

Preheat oven to 350 degrees. Cream together the sugar

And butter; add eggs and beat just until blended. Stir in

the un-drained pineapple, vanilla, and 1 cup chopped nuts.

Sift together flour, baking powder, soda and salt. Stir sifted

mixture into pineapple mixture just until blended. Spoon batter

into a well-buttered loaf pan. Combine topping ingredients and

sprinkle over batter. Bake for about 1 hour. To test for doneness,

stick a toothpick into the center of the loaf. If it comes out clean,

the bread is done. Cool thoroughly before cutting. Chilling makes

this bread easier to cut.

This serves 10 or more.

Steamed Green Beans

Steam the green beans and cool

Add some soy sauce, sesame oil and sesame seeds

Mix and serve at room temperature.






White Rice

Well you all know how to cook white rice,

Sandy used 2 cups of dry rice to make enough

for the 10 of us and what Sandy did was spooned

the juices from the Waikiki Chicken on top of the rice

And then some on top of the chicken when

She plated the food.

Sandy’s Coconut Ice Cream

Her recipe for this coconut ice cream is a family secret.

I will try and get her recipe, but so far

She is keeping it a secret.

What she did she put toasted and chopped macadamia nuts

Over the ice cream along with a slice of pineapple and mint leaves.

This was so good!

She also had dried pineapple and macadamia nuts on the table

to nibble on.
