Linda's Luncheon April 25th, 2022

 


This is Linda, our cook for the
month of April
She really made us all a very nice
luncheon.  Tons of food!
  The fruit kabobs were very 
refreshing. Thanks Linda for the
good food.
We enjoyed our time together and had
a ton of fun.  Everyone was able
to come and that was so nice. 
Next luncheon will be at
Marilyn's home.

Turkey Roll Ups

 

8 ounces cream cheese softened

¼ cup whole berry cranberry sauce

8 (10-inche) flour tortillas

1/2 head romaine lettuce torn in 4-inch strips

16 slices deli turkey

16 slices Havarti or Swiss cheese halved

2 medium tomatoes

 

In a small bowl mix cream cheese with the cranberry sauce until uniformly combined.

Lay one tortilla flat on a cutting board and spread a thick layer of cream cheese all the way

to the edges.  Layer 3 lettuce leaves down the middle of the tortilla

Layer two slices of turkey and 4 pieces of Swiss or Havarti cheese on top of the lettuce.  Top with several tomatoes.

 

 (Otherwise just spread the cream cheese all the way to the edges on the tortilla and then layer the rest of the ingredients on top.) That’s the easy way to do it.)

Starting at one end of the tortilla, roll tightly towards the filling.  Continue rolling until the 

filling is tightly wrapped and the cream cheese holds the rollup together.

Continue with the remaining tortillas until all have been assembled.  Wrap each tortilla rollup tightly in a plastic wrap.

Chill the wrapped rollups in the refrigerator until serving time.  To serve, trim any unfilled ends

away Slice each tortilla into 8 equal pieces.

We also had baby quiche and I don't know why
but I don't have a picture of them?  
I am falling down on my job.





The plates and napkins are so cute.


I do believe we were all stuffed!

we had cream puffs, eclairs, mini cupcakes
and mini apple squares, Linda
also made a big cupcake for Sandy's birthday
and put a candle on it.  Super fun.
