Joycie's Luncheon August 7th 2012



Hi this is me the Joycie and
we all had a fun time.

Marilyn you were missed.

I want to thank Linda and
Sheila and Nancy for helping
me with at the luncheon.
Linda made the centerpiece,
and the table runner and decorated
the table.  She is one talented young
lady.  Thanks Sheila for taking pictures,
and everything else you did.  Thanks
also to Nancy for helping at the luncheon.

We love Mexican Food



Okay I cheated, I bought the chicken
tamales at Costco.
The beans are a mixture of refried beans,
black beans, and paquinto beans.
Topped with shredded mild cheddar cheese.
Cilantro Lemon Rice

Brown the rice in Lucero Lemon Olive Oil along with
the onions.  Add some chicken broth or chicken base
to the rice and then add water and also chopped
cilantro leaves.  Cover and cook.

Table centerpiece and runner and peppers



Linda made the table decorations for
me.  She does a beautiful work.  She
even made the table runner.  What a
friend she is.  Thanks so much Linda!!!
You are the best!!!

I love the centerpiece she made.
We didn't turn the plates over until time
to fill them.

Mexican Salad

Chopped Romaine lettuce
Black beans
Corn
Onion rings
Orange and lime slices
Cilantro Salad Dressing Trade Joes


Some extras….
Chips and Salsa, and Sour Cream for dips

Dessert First They Say!

Joycie’s Orange Sensation

2 cups orange sorbet softened

1 package (1oz) Jell-O vanilla
flavor fat free sugar free instant pudding
1 cup cold milk
1 tub (8oz) Cool Whip

Topping of your choice

Spoon sorbet into foil-lined 9x5 inch
loaf pan.  Freeze 10 minutes.

Beat pudding mix and milk in medium
Bowl with whisk 2 minutes.

Stir in Cool-Whip, spread over sorbet.

Freeze and then add another layer of
sorbet.

Freeze 3 hours or until firm.  Unmold onto
plate, remove foil.  Let dessert stand 10
minutes to soften slightly before
slicing to serve.  Top with your choice of
toppings.

You can use any flavor of sorbet and
top with anything, like raspberry sorbet
with raspberry toppings, etc.

The middle of this dessert was too hard to cut, I had to
call in the army to cut it for me.  You could leave it
set out until it was soft and by doing that the sorbet
would have been melted.  So I don’t recommend
this recipe.  It would have been better to put a layer
of orange sorbet, a layer of vanilla ice cream, and then
a layer of orange sorbet.  You can use sherbet instead
of sorbet.
