Nancy's Luncheon January 23, 2012

 


This is Nancy, our cook for the month of January.

Linda couldn't make it to the luncheon due to the

snow and ice on the roads. You were missed Linda.

It was a great luncheon Nancy, and we all were stuffed.

Thanks so much for all your work in make this special for us.

Whoops, I almost forgot your Glazed Walnuts recipe

Nancy's Glazed Walnuts

¾ cup sugar white or brown sugar
¼ cup water
1 teaspoon vanilla
2 cup walnut halves

On medium heat place sugar, water, vanilla
in a cast iron skillet. Stir and then put in

These walnuts are off Nancy's walnut tree, and also
she gave us some lemons, and mandarin oranges off
her tree, thanks for all the goodies.

Nancy’s Creamy Mashed Potato Bake

3 cups hot mashed potatoes
1 cup sour cream
¼ cup milk
¼ teaspoon garlic powder
1/3 cup French’s, French fried onions
1 cup shredded cheddar cheese

Preheat oven to 350°. Combine mashed potatoes,
Sour cream, milk and garlic powder in a large bowl; mix well.

Spoon half the mixture into 2-quart baking dish. Sprinkle with
2/3 cup French Fried Onion and ½ cup cheese. Top with
the remaining potato mixture.

Bake 30 minutes or until hot. Top with the remaining onions
And cheese. Bake 5 minutes until onions are golden.


Avocado Mandarin Tossed Salad

1 can (11 ounces) mandarin oranges, drained
½ cup thinly sliced green onions
1/3 cup coarsely chopped pecans, toasted
1/8 teaspoon pepper
4 cups torn salad greens
1 medium ripe avocado, peeled and sliced
¼ cup prepared Italian salad dressing
Makes about 8 servings.

Dijon Chicken

½ cup margarine or butter melted
1/3 cup Dijon mustard
2 tablespoons dry sherry, optional
1/8 teaspoon ground ginger
2 whole boneless chicken breast
split (about 1 pound)
1/3 cup dry bread crumbs
(I used croutons garlic flavored)

In a small bowl mix the margarine, mustard,
sherry and ginger. Dip chicken in margarine
mixture then in bread crumbs to coat. Place on
ungreased baking sheet. Bake at 375 degrees for
35 to 40 minutes or until golden brown.

In a small saucepan over medium heat bring remaining
margarine mixture to a boil; simmer 2 to 3 minutes.
Serve over chicken.
Makes 4 servings

Whole Wheat Bread Rolls

Nancy said it was a family secret to
these rolls, I think next time I see her


Carrots, just cook and wing it!

Nancy’s Mom (Doris Spanfelner)
Her Frozen Lemon Dessert

Beat 3 egg yolks in top of a double boiler.
Add ¼ cup lemon juice and a little rind,
And 1 cup sugar minus 1 tablespoon.
Cook until thickened, stirring constantly.
Let mixture cool. Whip 1 cup cream in
a small deep bowl. Beat 3 egg whites
plus 1 Tablespoon sugar.
Fold whipped cream into the lemon
mixture. Fold in egg whites. Butter
8 inch square pan, sprinkle with vanilla
Wafer crumbs, and then add mixture and
sprinkle on top a few more crumbs.

Freeze

When ready to serve take out of freezer
A little while so you can cut and serve.
This may be made ahead of time.
Nancy used Graham Cracker crumbs instead
of Vanilla Wafer crumbs.
This is a very refreshing dessert!
