Marilyn's Luncheon May 20th 2013



Thanks Marilyn for all your culinary skills on making
this luncheon fantastic.  So good.

Marilyn says to tell everyone thanks for helping her
get this feast on the table.

She was so happy that everyone could attend her
luncheon.  It is such a fun time that we all stayed
until after 4PM, almost time for dinner.

Marilyn has a giant OAK TREE in her back yard that
is so pretty.  The picture above is only half of the trunk
of the tree.  I wish we could capture a picture of the whole tree.

How to make




             Cashew Chicken

4# boneless chicken thigh tenders
¾  c flour
1 t  black pepper
3T oil
¾ c low sodium soy sauce
6 T rice wine vinegar
6 T ketchup
2 T brown sugar
2 clove garlic minced
1 t  fresh ginger grated
½ t red pepper flakes
1 C cashews

Coat tenders with flour and pepper
Brown chicken for 2 minutes on each side
Put  chicken in slow cooker
Pour sauce over chicken
Add cashews when chicke in cooked.

Cook 3-4 hours on low



Salad

6 c bite size salad greens
1 c blueberries
1 c finely shredded Napa Cabbage
¾ c  ¼ inch slices of jicama sticks
1 can mandarin orange sections

Poppy seed dressing
2 T oil
2 T honey
2 T orange juice
1 T seasoned  rice vinegar
1 T poppy seed
2  t  Dijon mustard



Chocolate bread was really good on the right, and
the other breat was really good also.  Sorry no
recipe for these two.




   Roasted Bussell Sprouts with Balsamic         Vinegar


Turn oven to  375
Peel outer layers of Brussels sprouts and trim ends
Cut in half
Toss in blow with enough olive oil to coat evenly and then
   add vinegar and S&P
Oil a sheet pan and spread out Brussels sprouts cut side down
Roast in ove 15 minutes.  Flip to cut side up
Roast 10 minutes more
Add 1 C dried cranberries

Such a cute dessert



Marilyn put the minature cookies in the oreo cookies
for the ears and then dipped the oreo's in red chocolate
added the eyes nd made a really cute dessert.
With fantastic home made vanilla ice cream.  She loves
to make ice cream the old fashion way.
Sometimes the ears slipped up, but had a hard time
keeping them in place.  She did a great job.
