This and That

Alcy’s Red and White Salad

2 packages 30 ounce raspberry Jell-O

2 cups boiling water divided

1 can whole berry cranberry sauce

2 tablespoons lemon juice

1 cup heavy cream

1 8 ounce cream cheese

½ cup chopped nuts

Dissolve Jell-O in 1 cup boiling water. In another bowl

combine cranberry sauce and 1 cup boiling water.

Add Jell-O mixture and lemon juice. Pour into a

9X13 pan that has been sprayed with Pam, and

refrigerate.

In a large bowl beat cream until stiff peaks form, in

another bowl beat cream cheese until smooth. Stir in

½ cup whipped cream then fold in the rest, and spread

over Jell-O and sprinkle with nuts. Refrigerate for 2 hours.





Meat Loaves

Make the mixture the way you like. I added prune

pulp to keep it moist.

Roasted Vegetables

Peal turnips, parsnips, and yams. Cut all into about

the same size chunks. Put in a big bowl. Wash the

prepared cauliflower and cut into pieces, wash the Brussels

sprouts and add to bowl.

Put olive oil or canola oil on the veggies and mix

well. Add salt, pepper, garlic granules and onion soup.

The amount depends on the amount of veggies. Bake at

400-500 degrees until brown and done. I did use a spatula

about once to turn them. (I forgot to add the onion

soup mix) at the luncheon big whoops!
