Snacks







Upon arrival at Linda's home she


had all these snacks along with


lemonade, water, and tea for us


thirsty and hungry travelers.


Linda’s Cowboy Caviar


2 cloves garlic, crushed


2 (15-oz.) cans black beans, rinsed and drained


2 bunches green onion, chopped


2-3 Jalapeño peppers, seeded, chopped


¼ cup olive oil


2-(15-oz.) cans corn, drained


10-12 Roma tomatoes, chopped


1 bunch cilantro, chopped


¼ cup red wine vinegar



Chips



Mix the above and serve with chips.










Bread Appetizer Roger loves this one!



½ yellow onion chopped finely


1 to 2 tablespoons dried parsley
1 cup mayo
1 loaf buffet rye bread


1 piece Swiss cheese (I usually cut it into a triangle)



Mix all the above together. Spread on cocktail rye bread.
Broil 2 to 3 minutes or until bubbly.
