This is me the Joycie!
Thanks everyone for coming to the luncheon we did have a good
time of visiting, plus eating. Marilyn, I am so happy you could come for
Dessert, at least we did get to visit with you. Next luncheon will be at Clarisse’s
home, Monday, November 13th.
Chicken Enchilada’s
Flour Tortillas
Chicken
La Victoria mild Green sauce
Shredded Mexican cheese
Put all together in a dish and put in oven until it is warm.
Or you could layer them in a dish and make a casserole out of it.
You can also make ahead of time and freeze or just make the day ahead and refrigerate. It is a very easy dish to make. Thanks, Carla and Kathy for telling me about all this easy stuff to make.
I bought the pre-cooked grilled chicken strips at Costco
Also bought the flour tortillas that you buy in the refrigerated section at Costco.
A couple of nice young Mexican ladies were at Costco buying
the tortillas and I asked them about how good they were, and they said
they taste just like their mom's handmade tortillas. You do have to heat them
Until they bubble then turn over and heat, but they are really good.
I bought the salad pre-washed and also grape tomatoes at Costco.
Also the pumpkin pie and whipped cream there. So this is a Costco lunch!
Also, I had some cottage cheese and peaches for those who like that better than
the lettuce salad. Also, they are Costco items. Hey, I love Costco.
It was a very easy luncheon.

We have a new green towel table runner as someone??? spilled their tea. I wonder who?
We will keep that a secret!
