Pat's Luncheon Friday February 24th, 2017


Our cook for the month of February is Pat, and what a great fantastic
cook she is.  Everything and I mean everything was so good.
Thanks Pat for making the lunch so special for us.  

Marilyn you were missed!

Next luncheon will be at Marilyn Mae's home in March





This was so good.  The rice was a new to me and it was really good.

Rice Supreme

1- cup rice cook for 20 minutes rinse cold water, drain
   and then add:
½ cup chopped green onion
1- can Ortega chili’s
½ -pound Monterey Jack Cheese (shredded)
1/2- pound Cheddar cheese (shredded)
1-cup sour cream
salt and lemon pepper to taste.

Mix and bake covered 30 minutes at 350 degrees

Serves 8-10











Yummy Dessert!



Lemon Gelato

1- cup milk
1-cup sugar
5- egg yolks-beaten
3- Tablespoons grated lemon peel
¾- cup lemon juice
2- cup heavy cream

Heat milk to 175˚ then add sugar and stir to dissolve.  Whisk small amount
of this into egg yolks to temper. 
Return to pan and whisk constantly.  Add lemon zest and cook and stir
Constantly to 160˚and coats the back of a metal spoon then
remove from heat, add lemon juice.  Cool quickly in ice bath.  Add cream
Cover and refrigerate several hours or overnight.
Put into ice cream cylinder to 2/3 full and freeze as directed.  Transfer to
Freeze container and freeze 2-4 hours before serving.  Makes 1 ½ quarts

Chicken Kiev

4- whole chicken breast bones, skinned and pounded
Sprinkle with MSG
Whip ½ cup butter with ½ teaspoon each oregano, Marjoram and parsley
¼-pound jack cheese cut in pinky size pieces
Put 1 piece of cheese and a little butter mixture on chicken breast and roll
Dip in flour, beaten egg, then cracker crumbs
Bake 30 minutes at 350˚ then melt remaining butter with ½ cup Sauterne wine.  Pour over chicken and finish cooking until tender.

Alcy’s Yummy Bread
3- cups flour
¼ teaspoon yeast
1& ¼ teaspoon salt
Cornmeal as needed

In a large bowl mix flour, yeast and salt.  Add 1 ½ cup + 1/8 cup water
Until mixed
Dough will be shaggy and sticky, cover bowl with plastic wrap.
Let rest 12-18 hours at warm room temp.
Dough is ready when surface is dotted with bubbles.
Flour your work surface and put dough on it, shape into ball.
Let rise 2 hours.
Pre-heat oven to 450˚
Put in a heavy covered pot (Dutch oven)
Cover and bake 30 minutes.  Remove lid and bake 15-20 minutes more.
A note from Pat:

The Dutch oven needs to be in the oven as the oven pre heats as it needs to be very hot when putting the dough into it.
