CLARISSE SURPRISE PARSNIP PANCAKES
2 pounds parsnips, peeled
Cover with water and boil until tender. Drain and mash.
Add: 1/2 chopped onion
1/4 cup flour
1 egg, lightly beaten
1 T. minced chives
Drop by 1/4 cupfuls onto hot greased griddle.
Flatten with a spatula. Fry until golden brown.
Turn and cook until second side is lightly browned.
